Senior Connection friends Dick and Melinda Springs, and Mardi Shepard, put their heads together in an effort to stay emotionally and physically healthy this spring and created a “Giving Farm.”
Not only did it give them something to do as they socially distanced when Blaine County was hard hit with COVID-19, it also allowed Melinda to create something out of a corner of the ranch that she had longed to clean up and make productive.
What they have created is a beautiful small farm—from seed, all organic—that helps benefit the kitchen here at The Senior Connection. They have labeled themselves “seniors growing vegetables for seniors.” They are assisted by another friend, Peggy Grove, who has earned the title “the transplant queen.”
Tomatoes, potatoes, berries and cabbage are just a few of the wonderful things headed to Chef Brian’s kitchen. The first delivery was collard greens, which Brian served the next day with bacon, garlic and lemon and that was a huge hit with our lunch crowd. He has also created a wonderful coleslaw with the cabbage delivery.
The farm also uses compost materials from The Senior Connection kitchen to fertilize the crops contributing to the circle of sustainability.
