The Breakfast Club
In small towns (are we still a small town?) breakfast is an occasion for sharing the news. Who did what, where and when last night? We need to know! And while we love the gossip, we must relish the grub.
Bellevue is booming!
Lucy’s Breakfast in Bellevue, adjacent to Atkinsons’ Valley Market, next door to Yoimi, is the freshest, most adaptable hotspot yet, with a menu that allows you to create your own. With everything made in house, trust your plan. How does the saying go—‘Have things your way!’
Well, what do you crave? Indeed, Lucy’s is where you go to get specifically that—from build-your-own omelettes to breakfast burritos, ribeye with eggs, bacon all ways (yum!), pancakes and waffles to chilaquiles, huevos rancheros, migas and, as they’re also open for lunch and dinner, you might slip in for a burger, chicken fried steak, fresh enchiladas, or a grilled chicken salad with a beer or glass of wine on the way home from a long day.
The decor is instantly welcoming and chill with deep vermillion booths touting classy black borders evoking Louboutin with a splash of Twin Peaks. Lucy’s Breakfast just looks great, and that derives directly from Lucy herself.
Ms. Lucy Vazquez
Lucy Vazquez has been working in the Valley for the last six years. Originally visiting family here during the pandemic, her family found a calling. Vazquez’s father had worked in restaurants in Michoacan, her mother in Puerto Vallarta, and so it just made sense. Vazquez herself had worked solely in restaurants during her teenage years, and so, along with her father, a unique breakfast concept arose that also caters to lunch and dinner.
Lucy’s began in the Bellevue A-frame on Main Street, and later found an excellent spot in the mall next to the video store and Yoimi’s by Atkinsons’.
Vazquez is almost too beautiful. A born super-model (might this be her next move?), at just 23 she has the energy and experience to make anything happen here. Funny, friendly and humble, Vazquez has deep knowledge of food, service, business and how to make a cool scene.
Lucy’s Breakfast often rents out its large space for ‘apres’ anything, business luncheons, and has been known to hold wild karoke nights. Two large connected spaces offer plenty of room for dancing and drinking with a well-built bar to accommodate any party.
