The quality of the Cutthroat Club’s well-composed dishes stands up to the best upscale American food in cities like Atlanta, Dallas, or even L.A.

The entire staff are amazing at what they do and completely complement the community vibe of Bellevue. A new hire, starting her first bartending gig ever, 21-year-old Kayden Ratliff comes from a six-year stint at Ashley’s Coffee Corner. She was born and raised in the Valley and in fact lives with her family south of Bellevue on Alpine Cattle Company’s full-fledged farm. “It’s owned by my uncle right now, but my dad works for it. We just do farming all around this valley. So I grew up driving tractors down these roads.”

When asked what they grow, Kayden beams with excitement and expresses an intense fondness for rhubarb. “Carrots, lettuce, radishes, raspberries, blueberries. We have an apple tree. My grandma lives on Bayhorse and we do like raspberries, blueberries, rhubarb… I love rhubarb! It’s so good. Homegrown rhubarb is like nothing else.”

Ratliff has a penchant for hanging out with her family in Bellevue. “I have two younger siblings—they’re both 14.” She’s an avid weightlifter and, of course, loves skiing Baldy.
Staying fit and learning the ropes of bartending to hopefully keep up with her professional co-workers should keep Kayden’s plate full for the stint at Cutthroat and she’s definitely aware that she works for the best restaurant within 100 miles.

Ratliff makes a killer ‘pink drink.’ Be sure to ask her, and she’s already become quite adept at Old Fashions and Manhattans, perhaps the lifeblood of our whiskey-guzzling Valley.
Bellevue is becoming the hippest place in the Valley with great restaurants, a genuine speakeasy, new forums and possibly the vape shop if that’s your thing!

Cutthroat Club is located at 200 S.
